Dried Fruit If you own a dehydrator, pick up several different fruits and veggies at the market and introduce this activity to your child. If you don’t own a dehydrator, show your child some examples of dehydrated food. Try making a pot of Hobo or Stone Soup out of dehydrated veggies that you’ve collected at the market. Don’t miss this opportunity to discuss the American Indian’s and cowboy’s techniques for processing jerky. There was nothing like a barbwire fence and hot pepper in perfecting that perfect ‘jerk’. Before making your jerky, it is highly recommend that you pre-cook the meat to discourage foodborne illnesses such as salmonella, E. coli and Staphylococcus. To prepare meat, slice in ¼” or thinner strips across the gain of the meat at a right angle to ensure a tender jerky. Frozen meat slices easier than unfrozen. Create your favorite marinade and bring to a boil, then drop the meat into the marinade a few strips at a time. Return to boiling stage, then remove and place in food dehydrator and cook at 160 degrees for about 3-4 hours. Lower temperature to 140 degrees and continue to cook an additional 3-4 hours. Or cook as recommended by the manufacturer of your food dehydrator. If you desire to cook the jerky in your oven, cook at 160 degrees for about 8 to 10 hours. Test meat for doneness by bending; meat should be pliable and dry. If you detect moistness, return for additional cooking. As a note, you’ll need about 1½ cups to 3 cups of marinade for every pound of meat. A simple, yet tasty marinade consists of ½ cup of soy sauce, ½ teaspoon of black pepper, and ½ teaspoon of garlic powder, ½ teaspoon of Worcestershire sauce, and 2 Tablespoons of light brown sugar. Many people add a bit of hickory flavoring, but if you do, add carefully for a little goes a long way. Jerky will keep in a sealed container for 6 to 8 weeks.
