Homemade Pickles

Just about everyone remembers the episode from The Andy Griffith Show where Aunt Bea made pickles for the fair.  They were terrible, but Clara’s were divine!  She claimed it was due to ‘going wild with the allspice’!  

Homemade pickles are one of the easiest foods to make, and just about all children have a fascination with pickles.

Begin by using a crock, or a big container that will serve as a holding tank for your pickles.  Purchase only fresh, crisp cucumbers – as well as the following:

1 Tablespoon of standard grain salt

1 ½ cups of distilled white vinegar

2 ½ cups of sugar

½ cup of sliced onions

Several whole pepper pods

¼ Teaspoon of dill seed

7-8 cups of sliced cucumbers

Bring vinegar, salt and sugar to a rapid boil and continue to cook until sugar dissolves.

Meanwhile, place cucumbers and onions into crock.

Pour vinegar mix over cucumbers and onions then place into refrigerator. Allow to marinate at least 24 hours, then enjoy!
